Getting the right balance of flavours in a smoked cheddar takes time, especially as the maturing process has a big influence on the final taste. By using real oak smoke sparingly and restraining our natural instincts to 'go big', we've achieved real authenticity and depth of flavour without overwhelming the mature cheddar that lies at the heart of this cheese. It's a cheese that's powerful enough to work best with simple ingredients like crackers or in a cheese and ham sandwich (maybe with a dollop of Blueberry Hill piccalilli, if that's your thing).
